Reduce heat to low, cover, and simmer for 15 minutes or until the liquid is absorbed. Remove from heat and let it sit covered for 5 minutes. Fluff with a fork and allow to cool completely.
  • In a large bowl, combine the cooked quinoa, cherry tomatoes, cucumber, bell pepper, red onion, parsley, and basil.
  • In a small bowl, whisk together the lemon juice, olive oil, minced garlic, salt, and pepper.
  • Pour the dressing over the quinoa salad and toss gently to combine. Adjust seasoning to taste.
  • If desired, sprinkle feta cheese on top before serving.

Notes

Serve the salad in a large bowl or individual plates, garnished with extra herbs and a lemon wedge on the side for a refreshing touch.
