  • In a large skillet, heat the olive oil and butter over medium-high heat. Once hot, add the chicken breasts and sear for about 6-7 minutes on each side, until golden brown and cooked through. Remove the chicken from the skillet and set aside.
  • In the same skillet, add the sliced mushrooms and sauté for about 5 minutes, until they are tender and browned.
  • Add the minced garlic to the mushrooms and sauté for an additional 1-2 minutes until fragrant.
  • Pour in the chicken broth and bring to a simmer, scraping up any brown bits from the bottom of the skillet. Allow it to reduce for about 3-4 minutes.
  • Reduce the heat to low and stir in the heavy cream. Allow the sauce to thicken slightly, about 2-3 minutes.
  • Return the chicken to the skillet, coating it in the creamy garlic mushroom sauce. Simmer for another 2-3 minutes to warm the chicken through.
  • Taste and adjust seasoning if necessary.
  • Garnish with chopped fresh parsley before serving.

Notes

Serve over mashed potatoes or pasta for a complete meal.
