Start by slicing the avocados in half and removing the pit. Scoop out a small amount of the flesh from each half to create a larger cavity for the filling. Set the avocado flesh aside for later use.
In a mixing bowl, combine the shredded chicken and Cajun seasoning. Mix well to ensure the chicken is evenly coated.
Add the halved cherry tomatoes, chopped red onion, corn, black beans, and chopped cilantro to the bowl with the seasoned chicken.
Squeeze the lime juice over the mixture and gently stir to combine all the ingredients. Season with salt and pepper to taste.
Take the reserved avocado flesh and mash it lightly with a fork, then gently fold it into the chicken mixture, being careful not to over mash.
Generously fill each avocado half with the Cajun chicken mixture, packing it slightly for stability.
Arrange the stuffed avocados on a serving platter and garnish with additional cilantro leaves for a pop of freshness.
