Instructions
Begin by caramelizing the onions. In a large skillet, heat the olive oil over medium heat.
Add the sliced onions, a pinch of salt, and cook, stirring occasionally, for about 20-25 minutes until the onions are golden brown and soft.
Stir in the balsamic vinegar and thyme leaves. Cook for an additional 2-3 minutes, then remove from heat and set aside.
Preheat your oven to 400°F (200°C).
Place the flatbread on a baking sheet or pizza stone. Spread the caramelized onion mixture evenly over the flatbread.
Sprinkle the crumbled goat cheese on top of the onions. Season with salt and pepper to taste.
Bake in the preheated oven for about 10-12 minutes, or until the flatbread is crispy and the cheese is slightly melted.
If using, remove from the oven and top with fresh arugula and a light drizzle of honey for added sweetness and flavor.
Slice into pieces and serve warm.
