After draining your chickpeas, spread them on a clean kitchen towel and pat them dry, removing excess moisture.
In a bowl, combine the dried chickpeas, olive oil, chili powder, smoked paprika, garlic powder, cumin, lime zest, and lime juice. Toss until all the chickpeas are well-coated with the seasoning.
Spread the seasoned chickpeas onto a baking sheet in a single layer. Make sure they are not overcrowded for even roasting.
Place the baking sheet in the preheated oven and roast the chickpeas for 25-30 minutes, or until they are crispy and golden brown. Be sure to shake the pan or stir the chickpeas halfway through to ensure even cooking.
Once roasted, remove the chickpeas from the oven and immediately season with salt to taste. If desired, garnish with chopped fresh cilantro for an added flavor boost.
Let the chickpeas cool slightly before serving—they will become even crispier as they cool.
