In a large bowl, combine the olive oil, lime juice, chipotle powder, garlic powder, cumin, smoked paprika, honey, salt, and pepper. Mix well to create a marinade.
Add the shrimp to the marinade and toss to coat evenly. Let the shrimp marinate for at least 20 minutes in the refrigerator to absorb the flavors.
Preheat your grill or grill pan over medium-high heat. If using wooden skewers, soak them in water for about 30 minutes to prevent burning.
Thread the shrimp onto the skewers, about 5-6 shrimp per skewer.
Grill the skewers for about 2-3 minutes on each side or until the shrimp turn pink and opaque, making sure not to overcook.
Remove the skewers from the grill and let them rest for a minute.
Garnish the skewers with chopped cilantro and serve with lime wedges on the side for an extra burst of flavor.
