Instructions
In a large mixing bowl, combine rolled oats and shredded coconut. Stir them together until evenly mixed.
In a separate bowl, whisk together the almond butter, honey (or maple syrup), lime zest, lime juice, sea salt, and vanilla extract until smooth.
Pour the wet ingredients into the bowl with the dry ingredients. Stir until all components are thoroughly combined. If desired, fold in mini chocolate chips or dried fruits at this stage.
Refrigerate the mixture for about 30 minutes to firm up.
Once chilled, scoop out tablespoon-sized portions of the mixture and roll them into balls with your hands.
Place the energy bites on a parchment-lined plate or baking sheet and refrigerate for another 15 minutes to set.
Store in an airtight container in the fridge for up to one week.
Notes
Arrange the energy bites on a vibrant plate and sprinkle some additional shredded coconut around for extra appeal. Consider serving with lime wedges for a fresh touch!
