In a large pot, bring salted water to a boil. Add the penne pasta and cook according to package directions until al dente. Drain and set aside.
In a large skillet, heat olive oil over medium heat. Add sliced sausage and cook until browned (about 5-7 minutes). Remove the sausage from the skillet and set aside.
In the same skillet, add chopped onion, garlic, and bell pepper. Sauté until the vegetables are soft, about 3-4 minutes.
Pour in the heavy cream and chicken broth, stirring to combine. Mix in Cajun seasoning, paprika, salt, and pepper. Bring the mixture to a gentle simmer.
Add the cooked sausage back into the skillet and let it simmer for an additional 2 minutes. Then, stir in the drained pasta and grated Parmesan cheese, mixing until well coated and creamy.
Taste and adjust seasoning if necessary. Remove from heat and let it rest for a couple of minutes to thicken.
