Instructions
Pat the chicken breasts dry with paper towels and season both sides with salt, pepper, cumin, and chili powder.
In a large skillet, heat the olive oil over medium-high heat. Add the chicken breasts and sear for 5-7 minutes on each side until golden brown and cooked through. Remove chicken from the skillet and set aside on a plate.
In the same skillet, reduce the heat to medium and add minced garlic. Sauté for about 30 seconds until fragrant.
Pour in the coconut milk, lime juice, and lime zest. Stir well to combine and bring the mixture to a gentle simmer.
Add the chopped cilantro and stir again, allowing the sauce to thicken for about 3-5 minutes.
Return the chicken to the skillet, spoon some sauce over it, and let it simmer for an additional 2-3 minutes to absorb the flavors.
Taste and adjust seasoning with salt and pepper if needed.
Serve the chicken hot, drizzled with the creamy cilantro lime sauce, garnished with extra cilantro and lime wedges.
