Heat olive oil in a large skillet over medium heat. Season the chicken breasts on both sides with salt and pepper.
Add the chicken breasts to the skillet and cook for about 6-7 minutes on each side, until golden brown and cooked through. Remove the chicken from the skillet and set aside.
In the same skillet, reduce heat to low and add minced garlic. Sauté for about 1 minute until fragrant. Be careful not to burn the garlic.
Pour in the heavy cream, stirring to combine with the garlic, and bring it to a gentle simmer.
Add in the chopped spinach and Parmesan cheese, stirring until the spinach is wilted and the cheese is melted.
Return the cooked chicken to the skillet, spoon the creamy spinach sauce over the top, and let simmer for 2-3 minutes to meld flavors.
Sprinkle Italian seasoning over the dish and adjust seasoning with salt and pepper, if needed.
Serve hot with lemon wedges on the side for a fresh squeeze over the chicken.
