Instructions
Preheat the oven to 425°F (220°C) and line a baking sheet with parchment paper.
Wash the zucchinis and slice them into thin rounds (about 1/4 inch thick). Use a mandoline slicer for even cuts, if available.
In a shallow bowl, combine the breadcrumbs, grated Parmesan cheese, garlic powder, onion powder, Italian seasoning, salt, and pepper. Mix well.
In another bowl, beat the egg and add the olive oil, whisking until combined.
Dip each zucchini slice first into the egg mixture, allowing the excess to drip off, then coat with the breadcrumb mixture, pressing gently to adhere.
Place the coated zucchini chips on the prepared baking sheet in a single layer, leaving some space between each slice.
Bake in the preheated oven for 20-25 minutes, or until the chips are golden brown and crispy. Flip the chips halfway through baking for even cooking.
Remove from the oven and let cool slightly before serving.
Notes
Serve with a homemade dip like garlic aioli for added flavor.
