Instructions
Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
In a large mixing bowl, combine the cubed sweet potatoes, olive oil, minced garlic, thyme, rosemary, smoked paprika, salt, and pepper.
Toss the sweet potatoes until they are evenly coated with the oil and herbs.
Spread the sweet potatoes in a single layer on the prepared baking sheet.
Roast in the preheated oven for 25-30 minutes, tossing halfway through to ensure even cooking, until they are golden brown and tender.
Remove from the oven and let them cool for a few minutes.
Before serving, sprinkle fresh parsley on top for a burst of color and flavor.
Notes
For extra flavor, you can add a pinch of cayenne pepper.
