In a small saucepan, melt the butter over medium heat. Add the minced garlic and sauté for about 1-2 minutes until fragrant, being careful not to burn it.
Stir in the lemon juice, lemon zest, dried thyme, paprika, salt, and pepper. Remove from heat and set aside.
Place the cod fillets in a baking dish. Pour the garlic lemon butter mixture over the fillets, making sure each piece is nicely coated.
Bake in the preheated oven for 12-15 minutes, or until the cod flakes easily with a fork and is opaque throughout.
Once cooked, remove from the oven and let it rest for a couple of minutes. Garnish with freshly chopped parsley.
Serve the cod with additional lemon wedges on the side for an extra burst of flavor.
