Pat the chickpeas dry with a paper towel to remove excess moisture. This will help them crisp up in the oven.
In a large bowl, mix the chickpeas with olive oil, minced garlic, smoked paprika, oregano, salt, and black pepper. Toss until the chickpeas are evenly coated.
Spread the chickpeas in a single layer on a baking sheet lined with parchment paper.
Roast in the preheated oven for 20 minutes. After 20 minutes, stir the chickpeas and sprinkle the grated Parmesan cheese evenly on top.
Return the chickpeas to the oven and roast for an additional 10-15 minutes, or until they are golden brown and crispy.
Once done, remove from the oven and let cool for a few minutes. Garnish with chopped fresh parsley before serving.
