In a large bowl, combine the halved baby potatoes with olive oil, minced garlic, oregano, paprika, salt, and pepper. Mix well until the potatoes are evenly coated.
Spread the coated potatoes in a single layer on a baking sheet lined with parchment paper.
Roast in the oven for 25 minutes, stirring halfway through to ensure even cooking.
After 25 minutes, remove the baking sheet from the oven and sprinkle the grated Parmesan cheese evenly over the potatoes.
Return to the oven and roast for an additional 10-15 minutes, or until the potatoes are golden brown and crispy, and the cheese is melted.
Once done, remove from the oven and let them cool for a couple of minutes.
Garnish with freshly chopped parsley before serving for an added pop of color and freshness.
