In a medium bowl, whisk together the honey, Dijon mustard, olive oil, minced garlic, dried thyme, paprika, salt, and pepper until smooth. This will be your marinade.
In a baking dish, place the chicken thighs skin-side up. Pour the honey mustard marinade over the chicken, ensuring each thigh is well coated.
Let the chicken marinate for at least 30 minutes. For enhanced flavor, marinate in the refrigerator for up to 4 hours.
Once marinated, place the baking dish in the preheated oven. Bake for 35-40 minutes, or until the chicken is cooked through and the skin is golden and crispy. An internal temperature of 165°F (75°C) should be reached.
Optional: For an extra caramelized finish, set the oven to broil for the last 2-3 minutes of cooking—watch closely to prevent burning.
Remove the chicken from the oven and let it rest for 5 minutes. Garnish with fresh chopped parsley before serving.
