Instructions
In a medium mixing bowl, combine the heavy whipping cream, unsweetened cocoa powder, powdered erythritol, vanilla extract, and salt. Using an electric mixer, whip the mixture on medium-high speed until soft peaks form. This should take about 3-4 minutes.
In a separate bowl, beat the egg whites until they reach stiff peaks. Make sure the bowl and utensils are clean to achieve the best results.
Carefully fold the whipped cream mixture into the beaten egg whites using a spatula. Do this gently to maintain the airy texture of the mousse.
Once well combined, spoon the mousse into serving dishes or cups.
Refrigerate for at least 30 minutes to allow the mousse to set properly.
Before serving, top each mousse with dark chocolate shavings or a few fresh berries for an added touch of flavor and elegance.
