Lemon Blueberry Trifle

fresh blueberries

granulated sugar, divided

lemon juice

Greek yogurt

lemon cake, store-bought or homemade, cut into cubes
to taste
fresh mint leaves for garnish
Instructions
In a medium bowl, combine the fresh blueberries and 1/4 cup of the granulated sugar. Gently toss and let sit for about 15 minutes to macerate.
In another mixing bowl, whip the heavy cream with the remaining 3/4 cup sugar, lemon juice, lemon zest, and vanilla extract until soft peaks form.
Fold the Greek yogurt gently into the whipped cream until fully integrated; this will create a light and creamy lemon layer.
In a large trifle bowl or individual cups, layer the lemon cake cubes at the bottom.
Add a layer of the lemon cream mixture over the cake cubes, followed by a layer of the macerated blueberries (including the juices).
Repeat the layering process until you run out of ingredients, finishing with a layer of the lemon cream on top.
Chill the trifle in the refrigerator for at least 2 hours before serving to allow the flavors to meld.
Just before serving, garnish with fresh mint leaves and a few whole blueberries on top for a beautiful presentation.
Notes
Chill for at least 2 hours for best flavor.
