Instructions
Preheat your oven to 425°F (220°C).
In a bowl, toss the cut potatoes with olive oil, salt, and pepper until evenly coated.
Spread the fries in a single layer on a baking sheet lined with parchment paper.
Bake for 25-30 minutes, flipping halfway through, until crispy and golden brown.
While the fries are baking, mix the shredded chicken with buffalo sauce in a small bowl until well coated.
Once the fries are done, remove them from the oven and increase the temperature to broil.
Layer the buffalo chicken evenly over the fries, followed by the shredded cheddar cheese and blue cheese crumbles (if using).
Return to the oven and broil for an additional 3-5 minutes or until the cheese is melted and bubbly.
Remove from the oven and drizzle ranch dressing over the top.
Garnish with fresh chives or green onions before serving.
Notes
Adjust the spiciness of the buffalo sauce to your preference.
