2tablespoonsfresh cilantro, chopped
1tablespoonolive oil
to tastesalt and pepper
1teaspoongarlic powder
1teaspooncumin
Instructions
Preheat the grill to medium-high heat.
In a small bowl, mix together olive oil, garlic powder, cumin, salt, and pepper to create a marinade.
Coat each chicken breast with the marinade and let them sit for about 10 minutes to absorb the flavors.
While the chicken is marinating, prepare the mango avocado salsa. In a medium bowl, combine the diced mango, avocados, red onion, jalapeño, lime juice, and cilantro. Gently mix until well incorporated. Set aside.
Place the marinated chicken breasts on the grill and cook for about 6-7 minutes per side, or until the internal temperature reaches 165°F (75°C) and the chicken is cooked through. Remove from the grill and let them rest for a few minutes.
Serve the grilled chicken topped generously with the mango avocado salsa.
Notes
Let the chicken rest before serving for better juiciness.
