Instructions
Preheat your oven to 350°F (175°C). Grease a 9x5 inch loaf pan or line it with parchment paper.
In a large mixing bowl, combine the mashed bananas and melted coconut oil. Mix well until combined.
Add the maple syrup, eggs, and vanilla extract to the banana mixture and stir until smooth.
Sprinkle the baking soda, salt, and cinnamon over the mixture, then stir to incorporate.
Gradually add the flour to the wet ingredients, mixing until just combined. Be careful not to overmix.
Fold in the chopped walnuts, and if desired, the chocolate chips for an extra indulgent touch.
Pour the batter into the prepared loaf pan and smooth the top with a spatula.
Bake in the preheated oven for 55-65 minutes, or until a toothpick inserted into the center comes out clean.
Once baked, remove from the oven and let the bread cool in the pan for about 10 minutes before transferring it to a wire rack to cool completely.
