Instructions
Preheat your oven to 350°F (175°C) and line two baking sheets with parchment paper.
In a large mixing bowl, combine the melted butter, granulated sugar, and brown sugar. Mix until the sugars are well incorporated.
Add the eggs one at a time, beating well after each addition. Then, stir in the vanilla extract and peppermint extract, if using.
In another bowl, whisk together the flour, cocoa powder, baking powder, and salt. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
Fold in the semi-sweet chocolate chips and mint chocolate chips until evenly distributed throughout the batter.
Using a tablespoon or a cookie scoop, drop heaping scoops of cookie dough onto the prepared baking sheets, spacing them about 2 inches apart.
Bake in the preheated oven for 10-12 minutes, or until the edges are set and the tops appear slightly cracked.
Remove from the oven and let the cookies cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.
Once cooled, dust with powdered sugar for an extra touch of sweetness and presentation, if desired.
