In a large bowl, combine the rolled oats, pumpkin puree, almond butter, honey (or maple syrup), and vanilla extract. Mix well until all ingredients are fully integrated.
Add pumpkin pie spice, cinnamon, nutmeg, and sea salt to the mixture. Stir until evenly distributed.
Gently fold in the chopped nuts and mini chocolate chips if using. Make sure they are evenly incorporated.
Using your hands, form the mixture into small balls, about 1 inch in diameter. Place the formed balls on a baking sheet lined with parchment paper.
Once all the mixture is shaped into balls, refrigerate for at least 30 minutes to firm them up.
Store the energy balls in an airtight container in the refrigerator for up to one week.
