1cupbreadcrumbs (Panko preferred for extra crunch)
1/4cuphoney
1/4cupSriracha hot sauce
1tablespoonsoy sauce
1tablespoonrice vinegar
1teaspoongarlic powder
1/2teaspoonsesame oil
to tastechopped green onions for garnish
Instructions
Preheat your oven to 400°F (200°C) and prepare a baking sheet lined with parchment paper.
In a shallow bowl, combine flour, salt, and black pepper. Set aside.
In another shallow bowl, place the beaten eggs.
In a third bowl, add the breadcrumbs.
Dip each piece of chicken into the flour mixture, shaking off the excess, then into the eggs, and finally coat with breadcrumbs. Place onto the prepared baking sheet.
Bake for 15-20 minutes or until the chicken is golden brown and cooked through, flipping halfway for even crisping.
While the chicken is baking, in a small saucepan over medium heat, mix together honey, Sriracha, soy sauce, rice vinegar, garlic powder, and sesame oil. Stir until well combined and bring to a slight simmer. Cook for 3-5 minutes until the sauce is slightly thickened, then remove from heat.
Once the chicken is done baking, transfer it to a large bowl and pour the Sriracha honey sauce over the bites. Toss gently to coat all the chicken pieces thoroughly.
Serve hot, garnished with chopped green onions for an extra freshness.
