Instructions
Preheat your oven to 375°F (190°C) and line a muffin tin with paper liners or grease it with cooking spray.
In a large mixing bowl, whisk together flour, granulated sugar, baking powder, and salt until well combined.
In a separate bowl, mix the egg, milk, vegetable oil, and vanilla extract. Stir until smooth.
Pour the wet mixture into the dry ingredients, and gently mix until just combined. Avoid overmixing to keep the muffins light and fluffy.
Fold in the chopped strawberries and chocolate chips, ensuring an even distribution throughout the batter.
Scoop the muffin batter into the prepared muffin tin, filling each cup about ¾ full.
Bake in the preheated oven for 18-20 minutes, or until a toothpick inserted in the center comes out clean.
Allow the muffins to cool in the tin for 5 minutes, then transfer them to a wire rack to cool completely.
Notes
