Instructions
Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
In a mixing bowl, combine the olive oil, sweet chili sauce, minced garlic, soy sauce, salt, black pepper, and cayenne pepper (if using). Mix well to create a marinade.
Add the raw cashews to the bowl, tossing them in the marinade until they are evenly coated.
Spread the cashews evenly on the prepared baking sheet in a single layer.
Roast in the preheated oven for 15-20 minutes, stirring every 5 minutes to ensure they roast evenly and don’t burn. Remove them once they are golden brown and fragrant.
Allow the cashews to cool completely on the baking sheet. They will crisp up as they cool.
Once cooled, transfer the roasted cashews to a serving bowl and garnish with fresh cilantro.
Notes
Adjust the cayenne pepper to taste for desired heat level.
