Bring a pot of water to a boil. Add the rice noodles and cook according to package instructions, usually about 5-7 minutes. Drain and set aside.
In a small bowl, mix together the teriyaki sauce, soy sauce, honey, minced garlic, and grated ginger. Set aside.
In a large skillet or wok, heat 1 tablespoon of sesame oil over medium-high heat. Add the sliced chicken and sauté for about 5-7 minutes until cooked through and lightly browned.
Add the broccoli, bell peppers, and carrots to the skillet. Stir-fry for another 3-4 minutes until the vegetables are tender yet crisp.
Lower the heat and add the cooked noodles to the skillet. Pour in the prepared sauce and toss everything together, ensuring all ingredients are coated and heated through, about 2-3 minutes.
Drizzle the remaining tablespoon of sesame oil over the noodles and give one final toss. Remove from heat and stir in the chopped green onions.
Plate the Sweet Teriyaki Chicken Noodles in bowls and sprinkle with sesame seeds for garnish.
